We have two fantastic takes on the traditional Gin Collins for you in this recipe, each using our beautiful Gin Limoncello but finished with slightly different garnishes.
Sparkly and refreshing, use either mint or thyme to perfectly balance the lemon and gin botanicals for either a reinvigorating (mint) or more aromatic (thyme) cocktail.
We love both depending on the mood!

RECIPE
Ingredients:
- 50ml Newy Distillery Gin Limonello
- 20-30ml simple syrup optional (use mint flavour for mint version)
- 15ml fresh lemon juice
- Ice
- Soda
Garnish:
- Mint or thyme sprig
- Lemon wheel
Method:
1. Choose either at tall or gin glass, and fill 3/4 ice.
2. Pour in the Gin Limoncello, simple syrup (optional) and fresh lemon juice.
3. Top with soda.
4. Stir.
5. Add garnishes to suit.
6. Enjoy!
